Gnudi

These are delicious, buttery gigantic balls. They are truly a treat and I recommend them for those who are trying to watch their carbohydrate intake. 

Serves: 3
Ingredients: 
  • 1 pound ricotta
  • 1/4 cup parmigiano
  • 1 egg lightly beaten
  • 2 T melted butter, cooled slightly
  • 1/4 t nutmeg
  • 1 cup flour
  • Butter 
Directions: 
  • Mix ingredients together in a bowl 
  • Shape into logs. 
  • Cut into 2 inch pieces.
  • Cook for around 4 minutes in a pan with some butter. 
  • Finish in a bit of butter with sage and parmigiano or with a red sauce. 
  • Sprinkle with grated cheese on top.
